Leftover Nacho Migas

We’ve all been there, its the end of the night at the pub and there are still nachos left on the table. Unfortunately, nachos don’t handle aging very well, every minute out of the oven is a minute of perfection lost. Before reading this article, you may have well sent them back to the kitchen, never to see them again; but no more! Turn your Friday night disappointment into a Saturday morning treat!


  • Leftover Nachos
  • Eggs
  • Butter
  • Extra cheese (Optional, for if you ate all the cheese last night)

Start by separating tortillas from toppings, this doesn’t need to be done perfectly. You should be left with one pile of tortillas and another pile of toppings (see below.)

Melt a tablespoon of butter on medium heat into a large frying pan and add the tortillas. Stir the tortillas until they are crisp and crunchy, they’ll probably brown up a bit. If they begin to smoke, take them off the heat and let them cool a bit before putting them back on.

When the tortillas have returned to their former crunchy selves, add a couple of eggs (I used 3 for this recipe.) and stir them in. Continue stirring the mixture over the heat until the eggs are nearly cooked. While the last of the egg whites are still glossy and raw, add the rest of your toppings and stir them in. You may want to add some cheese at this point as well if you feel like you didn’t leave enough last night.


The final dish.

When the eggs have fully cooked and the toppings are warm, serve it on a plate and garnish with green onions, chipotle sauce or whatever suits your fancy!
